First of all it depends on the types of rules and regulations you mean. But no, not all government intervention undermines capitalism. As long as most of the free flow fo capital is allowed to spread unhindered.

Example in teh first one you talk about meaningful choices. The capitalist points out that under capitalism you can choose where you work (and thus where you live, what kind of car you drive etc.). You go into some labor theory to suggest they may not so you need socialism so they can make "meaningful" choices. what meaningful choices iare you don't seem to define, but I am pretty sure hwoever you define them (as long as it doesn't require taking form other people) that Capitalism offers that choice too.
I talked about MEANINGFUL choices. By meaningful, there needs to be a strong, distinguishing factor amongst the options. How is choosing to work for either Walmart or for McDonald's actually a "choice?"
Ok what is a meaningful choice that is offered by socialism but not by capitalism.
